PB & J Cookies

Two favorites come together at last - PB & J and cookies. This delicious inspiration from a lunchtime favorite will leave you feeling like a kid again.


  • 2 1/2 cups All-Purpose Flour
  • 1 tsp. Baking Powder
  • 1 1/2 tsp. Baking Soda
  • 2 cups packed light Brown Sugar
  • 1 cup Minerva Dairy Amish Roll Butter, softened
  • 1 cup Peanut Butter
  • 1 tsp. Vanilla Extract
  • 2 large Eggs
  • 2 Tbsp. of your favorite Jam or Jelly


Preheat oven to 375F. Combine flour, baking powder, and baking soda. In a large bowl, beat together the butter, brown sugar, peanut butter, eggs, and vanilla extract. Gradually blend in the dry ingredients- the dough will be very soft. Using a small ice cream scoop, drop the dough on a parchment lined cookie sheet 3 inches apart. Using the back of a large spoon dipped in flour, spread the cookies into large rounds. Bake 8-10 minutes and take a small glass dipped in flour and make an impression in the center of each cookie. Continue to bake 2-4 minutes until golden brown. As the cookies are cooling on a wire rack, spoon the jam or jelly into the impressions in the center of each cookie.
