Peach Cobbler Crumble Bars

Recipe and Images Provided by Strawberry Blondie Kitchen

Our family, including our beloved Grandma Lorraine, who famously told us that “there’s not much in life that can’t be made better with butter,” has made developing the perfect batch of butter our family legacy. This goal is more than 125 years in the making, a passion passed on from generation to generation, including our children, who make up generation six.

The end result is a line high butterfat butter in multiple, dreamy flavors, from sea salt butter to the garlic herb variety.

You can grab the rolled version of our butter — or the classic sticks you’ll often find on store shelves — from your local market or specialty store, by using our location tool.

So, without further ado, here’s Strawberry Blondies Kitchen’s recipe for Peach Cobbler Crumble Bars:

Prep Time: 1 Hour 5 Minutes
Servings: 20

Ingredients:

For the Crust and Crumble Topping

  • 3 cups all purpose flour
  • 1 cup old fashioned oats
  • 1 cup brown sugar
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1 cup (2 sticks) Minerva Dairy salted butter, cold
  • 1 large egg

For the Peach Filling

  • 6 peaches, diced
  • 1/2 cup brown sugar
  • 3 tablespoons corn starch
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cardamom
  • zest and juice from 1/2 lemon

directions:

For the Crust and Crumble Topping

  1. Preheat oven to 350 degrees F. Line a 9×13 inch baking pan with parchment paper or aluminum foil, allowing excess over the sides for easy removal.
  2. Into a large bowl combine flour, oats, brown sugar, baking powder and cinnamon. Using a fork or pastry blender, cut in butter until mixture becomes crumbly. Stir in egg and combine.
  3. Press two thirds of the mixture into the bottom of your prepared pan and refrigerate the remaining until later.
  4. Bake the crust for 12 minutes. Remove and allow to cool slightly.

For the Peach Filling

  1. While the crust is baking, into a large bowl combine peaches, brown sugar, cornstarch, cinnamon, ginger, cardamom, lemon zest and juice, fully coating the peaches.
  2. Place the peach mixture on top of the slightly cooled crust and top with flour/crumb mixture.
  3. Bake in preheated oven for 40-45 minutes or until topping is slightly golden brown.
  4. Remove from oven and allow to cool. Using excess parchment or aluminum foil, carefully remove from pan and place onto a wire rack to cool completely before cutting.
